Saturday, the peloton rolls out of Barcelona for three weeks and roughly 3,300 kilometers. In the early days of the race, riders raided cafés mid-stage, stuffed their pockets with bread and cured meat, and rode until their legs quit. The French have a word for that moment: la fringale. The bonk.

Here's what bonking actually is. Your body stores maybe 90 minutes of hard riding as glycogen, sugar packed into your muscles and liver. Run that tank dry on the road to the Pyrenees and it hits all at once: no power, a sudden, extreme fatigue you can't pedal through. Over 21 stages, how a rider competes depends heavily on how they fuel.

And the ceiling on that fuel keeps rising.

It used to be about 60 grams of carbs an hour; today's Peloton rides on 120, if not more.

That carb math is now a huge part of race strategy. Netcompany-INEOS (a WorldTour team with seven Tour wins) has a three-year deal with Maurten that goes well past a logo on the jersey.

A rider will take in around 80g of carbs before the start, from drink mix or gels. Then they keep topping up every 20 minutes or so, layering in more from gels and mix to hold their target all day.
